Joy of Cooking
Ingredients
- 2 c. unbleached flour
- 6 T. butter
- 1t. salt
- several tablespoons water, add as needed to form dough
Instructions
- Preheat oven to 350 degrees
- Add 1 t. salt to 2 c. of flour in a large mixing bowl, combine
- Cut butter into flour using a fork or pastry fork until it is the consistency of corn meal. This step is time consuming so be patient.
- Add 3 T. of water to this mixture and stir to combine. Keep adding water until it forms a dough but not too much or it will be too soft.
- Roll dough out onto a lightly floured surface. I turn the dough several times so that it does not stick to the counter. I keep reapplying flour to the counter top and rolling pin. Try to make the dough the correct diameter for the pie plate having enough overhang (1 inch) to form the outer crust.
- Place it gently into a 9-inch pie plate. Using a fork, poke many holes in the crust.
- Use thumb to go around the crust along the top edge to form the crust.
- Bake for 15 minutes
- Let crust cool at least 10 minutes before adding ingredients.
- You may want to cover the edges of the crust while baking the pie so that it does not get too brown.
