BEEF FLANKEN RIBS BRAISED IN SALSA WITH RED RICE

Additional Braising Medium
Mexican Red Rice
Instructions
Ribs:
- Prep ribs with seasoning. Combine salsa ingredients in food processor.
- Brown seasoned meat in 1/4 cup oil, med-high heat, remove ribs & set aside.
- Brown onions, add bay leaf & salsa. Deglaze pan a little with salsa. Salt & pepper to taste, then add meat. Then epazote.
- Cover & Simmer on low for ~25 – 30 minutes (until very tender – Longer = More tender!!!)
Rice:
- Blend 2 tomatoes, 2 cloves garlic, water, chicken buillion powder. Puree.
- Toast 1 cup washed rice 5 – 10 minutes @ medium heat. Add in 1/2 onion, spices. After toasting add in puree, salt & pepper.
- Simmer on low for 18 – 20 minutes. Don’t open the lid@ Turn off heat DON’T OPEN LID, let it set for 10 minutes.
