Beans are hot, everyone knows it!
Rancho Gordo’s basic beans recipe looked pretty good to me, so I gave it a try and am extremely pleased with the results.
Ingredients
- 1 pound Beans (i used large white lima beans)
- 1 pack bacon (cut into 1)
- 1 White onion (chopped)
- 4 cloves crushed garlic (peeled, a little smashed, but mostly whole)
- 3 tablespoons Better Than Bullion Chicken
- For: 6
- Preparation: 5 min
- Cooking: 2 h
- Ready in: 2 h 5 min
Instructions
- Check & rinse beans, then soak (if dry). I soaked for about 6-8 hours.
- In a large dutch oven, brown bacon on medium-high heat
- Once bacon is starting to get crisped up, add onion & garlic, simmer until onions are clear (5ish minutes)
- add beans with their soaking water, chicken bullion & then also add about 6 cups of water, crank the heat up to get a vigorous boil for 10 – 15 minutes.
- Reduce heat to a very gentle simmer, let simmer for 1-3 hours. Check bean consistency at your whim.
- Enjoy this easy AF & delicious soup!
