I like this recipe because you can add lots of different ingredients. I like to add less meat and more vegetables for example. I have also used a combination of ground beef and ground pork, which comes out really tasty. By serving it over a bed of white rice, the recipe goes even further than the 10 portions. I also like to have frito type chips to crumble into the bowl and I serve it with a blob of sour cream. It is even better when you add sliced avocado around the edge of the bowl. Don’t forget the Mexican grated cheese!

Ingredients
- 1/2 to 1 pound ground beef, 80/20 or 85/15 (you can make this 1/2 lb beef and a 1/2 lb pork)
- 1/2 medium sized chopped onion
- 1/2 medium sized green pepper (chopped)
- 1 15 oz. can black beans or 3-bean mix
- 1 10 oz bag frozen corn
- 1 28 oz can diced tomatoes
- 1.5 teaspoons salt (to taste)
- 1 tablespoon Chili powder
- 1 teaspoon ground cumin
- 2 tablespoons oil (I usually use EVOO)
- 1 good squirt Bragg’s Liquid Aminos
- 4 stalks green onions, chopped
- 1/2 bunch fresh cilantro, large stems removed, chopped
- 2 cloves crushed garlic
- For: 10

- Cooking: 30 min
- Ready in: 1 h
Instructions
- In a Dutch oven, add the 2T oil and after it is warmed up, add the chopped onion. While this is cooking, add a good squirt of the Bragg's. After the onions have softened a bit, add the meat and the garlic. Continuously chop the beef (pork)and garlic into the onion and let this cook until the meat is about 3/4 way browned. Add the chopped green pepper and continue stirring. When the meat is cooked through, add the beans, corn, diced tomatoes and spices. At this point you can add any other vegetables that strike your fancy. I have skipped the beans on occasion and added frozen yucca that has been boiled about 10 minutes. These are a good replacement for the beans. Once you bring all of the ingredients to a rolling boil, add the chopped green onions and the chopped cilantro. Turn the burner down to a slow simmer and cook for about 30 minutes. If you want to cook it even longer, that would not hurt it. Serve it over a bed of white rice with more sliced green onions, cilantro, fritos, sour cream and grated Mexican type cheese. Lime would be good too, at this point.
