In this recipe, besides the potatoes, I use 3 different vegetables but you can use other vegetables such as red or green peppers.

Ingredients
- 6-8 medium potatoes
- 4 stalks Celery
- 4 medium scallions
- 4 large large eggs (hard boiled)
- 2 medium Carrots (grated)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 2 tablespoons yellow mustard
- 3 tablespoons mayonnaise (heaping T's, your favorite type)

- Ready in: 1 h 30 min
Instructions
- I usually do not peel the potatoes. Chop them into 1/2 inch chunks, boil in salted water until they are fork tender. Chop the celery and scallions into 1/4 inch slices and place them in a large bowl. Add the grated carrots. Once they are cooked, drain the potatoes and add them to the bowl. Using an egg slicer, dice the eggs vertically and then laterally and add them to the bowl. Salt and pepper the eggs generously before mixing in. Add the mustard and the mayo, extra salt and pepper to taste and stir gently until all ingredients are thoroughly mixed. Chill for an hour or so.
